I want to share two methods I use for making this hot chilli sauce similar to the famous Tabasco sauce and they are: the simple fast sauce method and (the much slower) fermentation sauce method.

I'm gonna have to give it a go, using my slow cooker ceramic thing to ferment it in, as I currently have a chilli 'tree' that stubbornly refuses to stop growing more despite my insistence that enough is enough. Two bucketfuls of ripe ones, and more on the way. I mean, come on......
